Guiltless Muffins!

This muffin recipe has become a favorite in our family.  It is grain-free, sugar-free and GUILT FREE!  For you Paleo people, this would qualify as snack-worthy.  🙂

  • 2 cups Almond Flour
  • 1/4 cup Flax Meal
  • 1 teaspoon Baking Soda
  • 1 teaspoon Aluminum-Free Baking Powder
  • 2/3 cup Chopped Nuts
  • 1 teaspoon (or a little less) Stevia Powder
  • 4 Ripe Bananas
  • 4 Eggs
  • 1 teaspoon Vanilla

Combine dry ingredients in large bowl.  Combine wet ingredients in large bowl & mix well.  Add dry ingredients to wet ingredients and mix well again.  Pour into muffin tins (either greased with coconut oil or lined with unbleached baking cups) and bake at 350 degrees for about 15-20 minutes.  Remove once tops appear golden brown.  Allow to cool well before removing.  And then enjoy!

{A 12 oz bag of almonds will make 3 cups of flour.  Just pour small amounts into food processor or Vita Mix and blend into flour!)
