Grandpa’s Cookies (and they’re healthy!)

My father used to regularly ask me to bake these cookies for him.  The recipe was adapted from one shared with me, years ago, by a dear friend who patiently taught me new ways to eat healthy (and who has an amazing daughter with the most thought-provoking blog of any young lady her age…in my opinion).

Back to the cookies…

They are a bit time-consuming but so worth every minute.  And, if on a gluten-free or grain-free diet, you could substitute the flours.  {I have not had these since going “grain free” but would make them with only almond flour or coconut flour and substitute the “sugars” with agave nectar or honey}.

I hope you enjoy these yummy, healthy cookies as much as “Grandpa” did!

  1. 4 eggs
  2. 1 1/2 cups coconut oil
  3. 2 cups honey
  4. 4 T. unsulphured, blackstrap molasses
  5. 2 t. baking soda
  6. 2 t. baking powder
  7. 1 t. sea salt
  8. 2 to 2 1/2 cups whole wheat flour (can use other grains such as spelt or try gluten-free flours)
  9. 4 cups rolled oats blended into flour (good for gluten-free, but not for grain-free)
  10. 2 cups flax seeds ground into flax meal
  11. 1 cup whole flax seeds
  12. 2 cups raw sunflower seeds
  13. 1 cup raw sesame seeds
  14. 1 1/2 cups raw pumpkin seeds (ground) – optional
  15. 2 cups whole rolled oats (again, good for gluten-free, but not for grain-free)
  16. 1-2 bags chocolate chips (try Enjoy Life Chocolate Chips or cacao nibs/chips — I purchase these from iHerb — link at bottom of page in green box)
  • Mix together ingredients #1-#4 in medium-sized bowl
  • Mix together ingredients #5-#8 in really large bowl
  • Combine the two mixes together in large bowl
  • Add #9-#11 to large bowl and stir well (I use large, wooden spoon)
  • Stir in #12-#16 (I freeze the chocolate beforehand so it doesn’t melt while stirring)

This will be reeeeeally thick.  Place spoonfuls of dough onto cookie sheet (I use Pampered Chef stone) and bake for about 15-20 minutes at 350 degrees.  Cookies will turn golden brown.  And they’re done!

{Grandpa’s secret…ssshhhh…store cookies in the refrigerator because “chocolate tastes better cold.” :)}
